- 1/2 c. Pumpkin Puree
- 1 Egg White
- 1 Packet of Stevia
- 1 TSP Cinnamon or Pumpkin Pie Spice
- 1 TBS Chobani Plain Greek Yogurt
- .5 TSP Cinnamon or Pumpkin Pie Spice
- .5 TSP Vanilla Extract
- Mix together all the ingredients in a coffee mug (if you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites).
- Microwave for two minutes.
- Mix icing ingredients together until smooth.
- Add icing and top with pecans (optional).
